For the fries
- Sweet potatoes 700 G
- Olive oil 3 TBSP
- Garlic clove, chopped 1 TSP
- Paprika 1 TSP
- Salt 1 TSP
- Black pepper ½ TSP
- Corn flour 2 TBSP
For the guacamole
- 2 Avocados, halved and pitted
- ½ Roma tomato, diced
- 1 Serrano or jalapeño pepper, sliced
- ½ Small onion, diced
- 1 Teaspoon chopped coriander, plus more for garnish
- 1 lime, juiced
- Salt to taste
Steps
For the fries
- Peel the sweet potatoes and slice them evenly into fry-like pieces.
- Soak them in cold water for at least 15 minutes. Remove from water and pat dry.
- In a bowl, toss the fries with cornstarch. Add olive oil and toss again.
- Spread the fries on a baking sheet evenly without any overlapping.
- Bake in a preheated oven at 230°C for 15 minutes.
- Flip the fries and continue to bake for another 15 minutes.
- While the fries are baking, whisk to combine the garlic powder, paprika, salt, and pepper in a small bowl. Set aside.
- When the fries are crispy, remove from the oven and into a bowl. Add the spice mix and toss to coat the fries.
For the guacamole
- Place the avocados in a bowl and gently mash with a fork.
- Add the tomato, pepper, onion, and lime juice. Stir to combine.
- Add salt to taste.
- Plate the fries on a large platter. Top with the mound of guacamole and garnish with cilantro.
